Jamie Oliver is proud to present his stunning summer menu at Jamie’s Italian Canary Wharf, with dishes including a young courgette flower stuffed with ricotta, fontal and buffalo mozzarella; beautiful, whole sea bass farmed in the clean, cold waters of Anglesey and British Lamb Spiedini (the recipe is a real testament to the resourcefulness of the traditional Italian farmers). All these make a debut but the favourites have remained.
Probably the most exciting addition to the new pasta menu are the risottos. Jamie is introducing a Truffle Risotto, a Squid ink Risotto and a Risotto Milanese, but what’s so special about these dishes is the rice he will use. Just outside Turin, a family run business (run by husband and wife team Piero and Marianava), is producing what is widely regarded as the best rice in the world. The rice is aged for between 1 – 7 years and its ageing is controlled very specifically. The end product is a rice that has the same nutritional value as brown rice and is almost impossible to over cook!
